Zipei Zhang, Ph.D.

Assistant Professor, Division of Food, Nutrition & Exercise Sciences

Dr. Zhang received his Ph.D. degree in Food Science from the University of Massachusetts Amherst under the supervision of Prof. McClements in 2019. He was a postdoc associate in the laboratory of Prof. Kohane and Prof. Robert Langer between 2019-2022 in Harvard Medical School. Dr. Zhang joined Mizzou in 2023 as an assistant professor in the Division of Food, Nutrition and Exercise Sciences at the College of Agriculture, Food & Natural Resources.

Ruojie Zhang, Ph.D.

Assistant Research Professor, Division of Food, Nutrition & Exercise Sciences

University of Missouri

Dr. Zhang joined Mizzou in April 2023 as an assistant research professor. She obtained her Ph.D. degree in Food Science from UMass Amherst in 2019 and received postdoctoral training at MIT. Prior to joining Mizzou, Dr. Zhang worked as a senior scientist at Reynolds American. Her research interests include food product development, nutrition, supplements, micronutrient stability and bioavailability improvement, formulation optimization, sensory testing, biotechnology, delivery systems, controlled release, human digestion, functional food, and food safety.

Fangfang Li

Graduate Student, Division of Food, Nutrition & Exercise Sciences

University of Missouri

Fangfang joined Mizzou in May 2023 as a PhD student. She obtained her Master degree in Food Processing and Safety from Chinese Academy of Agricultural Sciences (CAAS) in 2022 and worked as Research Assistant at Mars for one year. She has been committed to the risk of mycotoxin in grain, the impact of intestinal flora on disease, and the analysis of nutritional elements in food. 

Beyond her professional pursuits, she likes making friends broadly, reading books, travelling, sports and trying all kinds of new things.

Hangxin Zhu

Graduate Student, Division of Food, Nutrition & Exercise Sciences

University of Missouri

Hangxin joined Mizzou in January 2024 as a PhD student. he obtained his Master degree in Food Science and Technology from Huazhong Agricultural University (HZAU) in 2023. His research interests include sensory testing, flavor analysis, antibacterial mechanism and nutrition.

Fan Zhang

Visiting Scholar, Division of Food, Nutrition & Exercise Sciences

University of Missouri

Fan joined Mizzou in November 2023 as a visiting scholar. He is a fourth-year Ph.D. student from School of Food Science and Technology, Jiangnan University. His research interests include cholesterol metabolism, isolation and purification of proteins, protein digestion and nutrition, protein and peptide chemistry.

Lilli Caldwell

Undergraduate Student, Division of Food, Nutrition & Exercise Sciences

University of Missouri

Lilli began studying nutrition at the University of Missouri in 2021 and intends to pursue a Masters in dietetics. She has research experience studying the gastrointestinal effects of cystic fibrosis in mice at Dr. Clarke’s Lab and would like to explore food science technologies. Beyond professional pursuits, she likes reading, writing, traveling, and training for triathlons.
